In Cristina Brino Finca Adalgisa has found a great chef who does both: she serves the guests and teaches them how to cook.

Ask Cristina Brino who inspired her to become a cook, she has a straight and simple answer: “My grandmother. “ As a little girl she grew up in the city of Lujan de Cuyo and loved the dishes her grandmother prepared. From early age on, she helped her in the kitchen – and never left it ever since.

After high school Cristina studied at the Escuela Internaciónal Islas Malvinas, one of Mendoza’s top institutions for tourism and gastronomy. She then joined Francis Mallman’s legendary restaurant 1884 in Mendoza, which was the first place to introduce gourmet food to the province and has gained international fame. When Mallman opened a restaurant in the Brazilian metropolis of Sao Paulo, Cristina went there to help him. Later, she worked as a chef in Chile from 2003 to 2007 and returned to her native Mendoza in the
year 2007 to join Finca Adalgisa.

At the Finca she has become renowned for her cooking classes which are a must-do for everyone who wants to find out how typically mendozian food is prepared. In the Finca’s garden under a walnut tree or at the winery Cristina teaches how to prepare empanadas, rib eye steak with a typical Argentinean sauce (“Chimichurri“) and caramelized fruit. Of course, all is done in a clay oven or on an open fire. Cristina prepares her classes carefully. She picks the herbs for the sauce in the Finca’s own garden, she uses the olive oil of the Finca and she instructed a local butcher in Lujan just how she wants him cut the rip eye off the bone. “She’s knows exactly what she wants, you can’t fool her“, he says.

About the cooking class


By using typical ingredients Cristina prepares unique plates generating harmony between the regional products she uses. She works with fresh products only and some of them are cultivated and recently harvested at the Finca´s green garden.

The classes are around  two and a half hours long and could be taken in groups from 2
up to a maximum of  8 people.

You will learn to prepare typical regional food consisting of fresh  product which you
can obtain easily in any place of the world.

We will prepare “empanadas mendocinas” in the clay oven. Then continue making meat and vegetables on the open fire with fresh chumichurri sauce based on Arauco olive oil
from the Finca itself.

Finally the class will end with a desert: caramelized fruit from the clay oven,
topped off with herbs from the Finca.

The food you prepare during the cooking class, can be easily made at home in a
conventional kitchen.

At last you will receive a Finca Adalgisa apron as a reminder of your cooking class
at Finca Adalgisa.

How to book


Who wants to participate in one of her cooking is welcome to visit our vineyard and winery. You can either participate interactively in the preparation and cooking or, if you prefer, you could just look and learn how Cristina cooks your dinner. The classes are held at Finca Adalgisa Winery and our unique Malbec will be your company during the whole evening.
